American Reserve Black Caviar, Amia calva (Cajun name Choupique) is one of the few wild roes still available. Harvested from an ancient species of fish common in the open waters of the southeastern U.S. rivers and water ways. Eggs ensconced in it's own oil separate easily, ideal for spreading. Flavors are mild and tangy with a clean palatable finish. Small firm, shinny rich translucent black pearls deliver a lively smooth burst of flavor comparable to rare non-farmed sturgeon caviars. Similar in taste to the "American Premium Black Osetra", with slight ocean notes typical of premium grade caviars. Texture is smooth creating a creamy pronounced burst of complex flavors. This caviar turns reddish in color when heated.
